I want to give users the ability to cover their payment gateway charges, so that a charity like ours can benefit from it.

I think this is similar to who should absorb the fees. Basically, there should be an option for the fees from the payment gateway to be passed onto the customer.

So if I were to pay 2.9% with Stripe—I could pass those fees onto the user instead of me having to pay it directly.
