I'd like to connect cognito forms to DEX CRM through Pabbly, but Dex isn't listed in the connection directory (It is on Zapier) Is there any way to make this connection with some type of webhook?

Sorry, we don't have integration with Dex CRM as of now.
You can add your integration request on the board and others can also upvote so that we can add new integrations on priority based on the feedback.

Further, if Dex supports API then you can use API by Pabbly module and can connect it and fetch the data
