Email Parser attachment change info

Hi there,
Can you guide me on how I would complete the following workflow please?

1. Recieve email attachments from X system (Email Parser correct? )
2. Change 1 column info from Yes/No to True/False - Where / How would I do this? The "Y" system requires a true/false.
3. Send information to Y System using API (API Correct?)

Help appreciated.
