How do I update fields to blank, or filter by blank fields?

I am trying to create a couple of workflows to update contacts in my dialer with alternate numbers if they exist, or remove them from lists if no other numbers are in my other fields. I am having a problem with either deleting the value in a field, or filtering for blank values in a field. Any info already existing, or someone who can point me in the right direction?

Ahhhh... I was looking for every other term of a branching function. Thanks. What about clearing (deleting the value of a field) or recognizing a blank field value?
