We want the appendix people share by email to our email, automatically attached to their profile/contact profile in Hubspot. Is this possible

You can only upload files to the attachment section in HubSpot if they're already in your HubSpot account. Unfortunately, there isn't an option available through the HubSpot API to add a completely new file to that section. I'm afraid the scenario you're describing doesn't seem achievable based on the current capabilities.
