Hey guys ... overnight I started getting an "Unprocessable Entity Error" on workflows that have been working for months. Need help please.

Please verify your mapped values against the historical logs' incoming data to see if any custom field value you have mapped is receiving any disrupted values.

Please check now the action step should function correctly. For the tasks that failed, you may attempt to re-execute them from your task history.
Having the same issue with Lead Connector V2
Hey @BPP_ColeSlaw
Kindly select False if you do not wish to select the DND option while creating the contact.
Else you can make use of the Create or Update Contact Beta version action step for the same.
