I run a gym type business and want to get all customers from Zoho Books every three weeks to create an attendance sheet. I see how to return a single customer, how can I get all customers?

EDIT: Seems I can get all customers from Get Customer by Email and not specifying an email.

You can search the contacts by using "Zoho Books: Get Contact by Email" with the help of an email address.
