365 to salesforce by email subject?

Hello, I'm trying to setup a possible connection between Microsoft 365 and salesforce.
Action: New email comes in with a specific Subject (ex: new registration received) -> that subject name triggers a new record in salesforce

Is that possible, and if so, how? I don't see an option to select the email subject to trigger the new record in Salesforce.
