Different Between New Order Created and New Customer Created in Woocommerce Webhook

Hi I want to know what is the different between New Order Created and New Customer Created? I want to do this, when the orer in woocommerce changed to Processing, I want to automatically update my google sheet (Add New Row). Which selection menu in Woocommerce webhook in Pabbly I need to choose to capture order processing status data?
