Insert data from previous step

HI, I want to know how the "Insert data from previous step" is working.

For example, I found customer email on the first screenshot, but how to find it on the second screenshot ? It seems that I don't have any option in the "search and map data" field.

Sorry, it seemed to be a temporary error. Now I can see the choices in the scrolling field
