I am creating a trigger to make a new lead in saleforce when specific language from an email is received. The issue I'm facing is the Microsoft Bodypreview does not pull the entire message and we cannot extract the important information needed with the text formatter to create the lead. How can we ensure the entire message is pulled so we can select all the appropriate data for text formatter?

Regarding your concern, you can utilize the Text Formatter action step to extract the plain text from the HTML body, including all relevant data.

Upon further testing the system is still not properly pulling all of the information. The email does not pull everything, this time its not pulling the full email address so that is causing another step to fail. Screenshots attached.
