I was thinking about purchasing a Pabbly Connect license, but I'm hesitant. For 4 months I've been trying to configure Pabbly Connect so that a customer is created in Systeme.io if the customer doesn't exist and only a tag is added if the customer exists in my CRM in Systeme.io. When I'm in test mode, it works but in LIVE mode nothing communicates anymore.

Are you sure you are using same steps in Live as in Test? Please refer this video for your reference:
