How do I map additional fields to SalesForce? I only see like 14 fields that can be mapped to SalesForce.

Also, is it possible to look for a lead and if a match isn't found, then create a new lead instead of just creating a new lead which will cause duplicates.

Yes, it is possible. Just follow the steps given below:
  1. To search for an existing lead, use the Salesforce: Search Record action step.
  2. Add a Filter to your workflow to filter out existing leads.
  3. Set up Salesforce: Create Lead as the action event to create new leads.
