I've sent about 15 emails and only 3 have actually shown up in the Notion database. I'm not sure how to troubleshoot this.

Check History for that particular workflow and provide workflow name for pabbly team's reference.
Make sure the email content you're passing in the Notion application for creating a page has less than 2000 characters. We are seeing the character error in your workflow -
